Separate the stems from the mushroom caps and mine the stems
Fry the sausage, breaking it up into fine pieces
Take out the sausage and let cool
If there is more than 1 Tablespoon grease in the pan, drain leaving just 1 Tablespoon
Fry the minced vegetables in the sausage drippings until soft
Combine the cooked sausage and vegetables with the cheese
Stuff the mushroom caps with the mixture
Bake the stuffed mushroom caps at 350 degrees for 20 minutes
