This is the traditional sage breakfast sausage. It can be made into patties, links or left bulk. Breakfast sausage is usually fried. Frying up some of the bulk sausage and adding to turkey stuffing gives a great flavor.

Mild sage flavored breakfast sausage. Usually left in bulk form but can be cased if desired. It can be fried as a patty or fried as loose sausage to add a great flavor to stuffing. Traditionally made with all pork but it is really delicious with a mixture of venison and pork or all turkey.

Ideas to use making Breakfast sausage

1. You can add at least 1 teaspoon of dried red pepper to the meat to make it hotter. How much you add is your personal preference, but I would start with 1 teaspoon and cook up a little of the sausage and adjust from there.
2. You can use venison, beef, turkey, or any combination of meats.
3. Chop up 1/2 cup of dried fruit fine (cranberries, cherries, apples, etc.) and add to meat

If you grind your own meat, you can just grind the additional items with the meat rather than chop them fine. They will mix with the meat better that way.

You can also use combinations of the above ideas together such as adding hot pepper and dried fruit.
