How I Got StartedMy family has always made homemade sausage, in fact the seasoning that started it all, Italian, was my grandfather’s recipe! He brought it to America from Italy when he came here. I remember watching my family mix the seasonings with the meat and stuff it into casings. It was always a fun time and I have many great memories. My job was to rinse the casings and get them ready to stuff. When I got to be an adult I started making my own sausage, starting with what I knew – Italian. Then I wanted to make something for my wife’s family, they are German, so developed the bratwurst recipe. I was hooked and started developing all kinds of mixes. As with anything that is in development, some were good, some not so good. The ones that were good were continually refined until they were just right, and became the recipes used in the seasonings mixes I’m selling today. There is over 20 years of research and testing that went into the seasoning mixes I am making now.
My mission in starting Papa Greco’s is to further home sausage making by providing high quality seasoning mixes to the home sausage maker. Commercial sausages are made to create a profit and to appeal to the masses. When you make your own sausage, you are in control of everything – you use the types and cuts of meat you want, how lean or fat you want it, you choose your seasoning mix (hopefully Papa Greco’s!), you decide what else is added to the sausage. You make it exactly to your tastes.

Making sausage has been a passion of mine since about 1980.
My parents didn’t believe in prepackaged food, we always made things from scratch. Store bought sausage is made for a profit, when you make it yourself you can control the freshness, cut, and fat content of the meat. Also, you can make it exactly to your tastes.
My sausage spice mixes are good as they are packaged, but you can adjust and change them to your own tastes. That is what making homemade sausage is all about.

My mixes are also generally lower in salt content than other spice mixes, but that doesn’t mean they have less flavor.
