Summer Sausage Seasoning: This sausage is a great way to use any wild game. I have tried it with deer, but I’m sure any red meat would be fine. Making summer sausage is a little more complicated than making a fresh sausage, but it still isn’t very hard.
To safely make summer sausage or snack sticks out of this mix you must use 11.34 grams (approximately 2 teaspoons) of meat cure which is available with each kit. You can buy just the seasoning and meat cure together with Kit #1.
You must case summer sausage in large fibrous casings, or form rolls by hand and wrap in a double layer of heavy duty aluminum foil. The seasoning mix, fibrous casings and meat cure are included in Kit #2.
To make snack sticks you must use 17-21mm edible collagen casings. The seasoning, 21mm snack stick casings and meat cure are available with Kit #3. At this time the 21mm snack stick casings are only available as part of a kit.
Each seasoning mix package will season 10 lbs of meat into Summer Sausage (Beef Stick).
You do not need cure to make either fresh sausage, or to use the mix to seasoning ground meat for hamburger patties.
Ideas to use making Summer sausage
- You can use wine either, dry red or dry white in place of the water to mix the sausage
- You can add dried red pepper to taste to the meat.
- You can start with 1-3 teaspoons, only do this if you like heat the sausage already is spicy.
- You can add 1 pound of any flavor HIGH TEMPERATURE cheese just before casing the meat. Must be HIGH TEMPERATURE cheese so it won’t melt into a mess.
- You can use venison, beef, turkey, pork or any combination of meats.If you grind your own meat, you can just grind the additional items with the meat rather than chop them fine. They will mix with the meat better that way.

This is the first summer sausage mix I ever tried, after years of trying all the other mixes, Hi Country,LEM, AC Legg, and all of the Walton’s I always come full circle back to papa greccos, I’ve used pork, beef, venison, elk and Bison and every time they turn out amazing.
