Stuffed Mushrooms

Ingredients

  • 1/2 lb bulk Italian sausage (of course made with Papa Greco's Italian Spice Mix)
  • 1 lb large fresh mushrooms
  • 1/4 c. minced onion
  • 1/4 c. minced carrot
  • 1/4 c. minced green pepper
  • 1 tbsp minced fresh parsley (or 1 teaspoon dried parsley)
  • 1 clove garlic minced
  • 2 tbsp grated cheese (I use imported Romano)

Instructions

  • Separate the stems from the mushroom caps and mine the stems
  • Fry the sausage, breaking it up into fine pieces
  • Take out the sausage and let cool
  • If there is more than 1 Tablespoon grease in the pan, drain leaving just 1 Tablespoon
  • Fry the minced vegetables in the sausage drippings until soft
  • Combine the cooked sausage and vegetables with the cheese
  • Stuff the mushroom caps with the mixture
  • Bake the stuffed mushroom caps at 350 degrees for 20 minutes

Recipe: Giovanni Sandwich

Giovanni Sandwich

Ingredients

  • 1 lb. bulk Italian sausage (of course made with Papa Greco's Italian Spice Mix)
  • 4 slices provolone cheese
  • 4 fresh, hard crusted Italian rolls
  • 1 c. Italian Sausage Condiment (see recipe)

Instructions

  • Make 4 - 1/4 pound patties out of the Italian Sausage
  • Cook them by either pan frying, grilling, or BBQing
  • When the patties are done, put a slice of provolone cheese on each patty and continue cooking until starting to melt
  • Put a patty on each roll and cover with the Condiment for Italian Sausage

Notes

Great with a salad and glass of dry Italian red wine.

Recipe: Italian Sausage Condiment

Italian Sausage Condiment

Ingredients

  • 1 green pepper sliced at least 1/4" thick
  • 1 red pepper sliced at least 1/4" thick
  • 1 Spanish onion sliced about 1/4" thick
  • 1 lb fresh mushrooms slicked about 1/4" thick
  • 2 large garlic cloves minced
  • 1 tbsp olive oil
  • 6 oz can tomato paste

Instructions

  • Fry the peppers, onion, mushrooms, and garlic in the olive oil over medium-high heat until starting to wilt
  • Cover and lower heat to medium and cook stirring occasionally until the vegetables give up their liquid
  • Add in the tomato paste and stir thoroughly
  • Lower the heat to medium-low, cover and cook an additional 15 minutes.

Notes

Tip! You can either serve hot, warm, or cold. It is also great to let your COOKED Italian sausage stew in this for about 30 minutes and then serve over pasta, polenta, rice, or in a bun.
My kids and I also like to eat this with a spoon directly out of the refrigerator!

Recipe: Bratwurst Meatloaf

Bratwurst Meatloaf

Ingredients

  • 1 lb. bulk bratwurst (of course, home made using Papa Greco's bratwurst spice mix!)
  • 1 onion coarsely chopped
  • 1 egg scrambled
  • 1/4 c. ketchup
  • 1/2 c. plain bread crumbs

Instructions

  • Mix all ingredients
  • Put into a bread loaf pan, smoothing out the shape
  • Bake at 350° for 1 hour
  • Let cool 10 minutes before slicing

Notes

Also makes great sandwiches!

Recipe: Bratwurst Sandwich

Bratwurst Sandwich

Ingredients

  • 1 lb bulk bratwurst (of course, home made using Papa Greco's bratwurst spice mix!)
  • 4 slices Swiss cheese
  • 8 slices pumpernickel or caraway rye bread
  • 2 c. sauerkraut

Instructions

  • Make 4 1/4 pound patties out of the bratwurst
  • Cook them by either pan frying, grilling, or BBQing
  • When the patties are done, put a slice of Swiss cheese on each patty and continue cooking until starting to melt
  • Put a patty on slice of bread and cover with 1/2 cup of sauerkraut, cover with a slice of bread

Notes

Great with a cold mug of beer and sweet and sour red cabbage as a side dish...!

Recipe: Sweet and Sour Red Cabbage

Sweet and Sour Red Cabbage

Ingredients

  • 1 head red cabbage sliced about 1/4" thick (1-2 lbs.)
  • 1 onion sliced
  • 2 red apples cored and sliced
  • 1/2 c. dry red wine
  • 1/4 c. vinegar
  • 1/4 c. brown sugar
  • 1 tsp ground black pepper

Instructions

  • Mix all ingredients in a large sauce pan and cook covered over medium heat until cabbage is wilted and tender, about 45 minutes to an hour
  • As an option, you can fry 3-4 slices of diced thick style bacon and add to the cabbage.

Recipe: Sauerkraut

The Best Sauerkraut

Ingredients

  • 1 lb Sauerkraut, drained but not rinsed (bag or jar, not canned)
  • 1 tsp brown sugar
  • 1 red apple cored and sliced thin (skin left on)
  • 1 small onion sliced thin
  • 1 tsp caraway seeds
  • 1 potato, peeled and grated
  • 1 c water or dry white wine

Instructions

  • Mix all ingredients in a large fry pan and cook covered over medium low heat until hot and onion and apple are tender
  • Put bratwurst links on top of the sauerkraut as it is cooking. This will steam the brats and the drippings will give the sauerkraut a great flavor.
