This will show you how to make home made breakfast sausage.
 
If you have a grinder of any kind you can do this. It’s easy and you get a much higher quality than you can buy in the store for the same or less money!
 
I am using the mild sage breakfast sausage mix from www.papagrecos.com I have had nothing but GREAT luck with his products and there will be several more videos coming using some more of them.

This is how to make a venison roast into corned venison!
 
This delicious and easy corned venison can be used in all kinds of things but makes great sandwich meat out of your deer roasts!
 
We used corned beef mix and #1 pink salt cure from www.papagrecos.com to make this.
 
It only took a couple hours of actual work and is VERY SIMPLE!

Summer Sausage 101!
 
This will take you through the process of making venison summer sausage from ground deer meat (with 10% beef fat in the grind) using a summer sausage spice mix from https://www.papagrecos.com
 
Papa Greco’s kits are made using old world recipes and the ones I have tried so far are nothing short of amazing!
 
Making summer sausage requires a few pieces of equipment to do it well:

You can smoke it or use your oven and slow cook it at between 160 – 175*F until you reach an internal temperature of 150-152. This keeps you from rendering the fat and keeps the sausage moist!

We made up a batch of Papa Greco’s Teriyaki snack sticks and burgers. This stuff is AMAZING!
 
Making your own burgers and snack sticks is easy. Here is EVERYTHING we used in making this video:
 
  • Papa Greco’s Teriyaki Seasoning Mix. Papa Greco’s has some of the best sausage mixes you’ll find anywhere!
  • Masterbuilt MES40 electric smoker
  • Wedgie Smoker and pellets: www.bbqpelletsonline.com
  • LEM #12 Meat Grinder
  • Hakka Bros 15# Sausage Stuffer
  • Vacmaster VP215 Vacuum Sealer

Acquiring all this gear is a big expense but well worth it. I got mine one at a time over several years and now I have everything I need. Buy GOOD equipment! Save up if you need to and buy it once. Good stuff will last a lifetime!

Recipe: Stuffed Mushrooms

Stuffed Mushrooms

Ingredients

  • 1/2 lb bulk Italian sausage (of course made with Papa Greco's Italian Spice Mix)
  • 1 lb large fresh mushrooms
  • 1/4 c. minced onion
  • 1/4 c. minced carrot
  • 1/4 c. minced green pepper
  • 1 tbsp minced fresh parsley (or 1 teaspoon dried parsley)
  • 1 clove garlic minced
  • 2 tbsp grated cheese (I use imported Romano)

Instructions

  • Separate the stems from the mushroom caps and mine the stems
  • Fry the sausage, breaking it up into fine pieces
  • Take out the sausage and let cool
  • If there is more than 1 Tablespoon grease in the pan, drain leaving just 1 Tablespoon
  • Fry the minced vegetables in the sausage drippings until soft
  • Combine the cooked sausage and vegetables with the cheese
  • Stuff the mushroom caps with the mixture
  • Bake the stuffed mushroom caps at 350 degrees for 20 minutes

Recipe: Giovanni Sandwich

Giovanni Sandwich

Ingredients

  • 1 lb. bulk Italian sausage (of course made with Papa Greco's Italian Spice Mix)
  • 4 slices provolone cheese
  • 4 fresh, hard crusted Italian rolls
  • 1 c. Italian Sausage Condiment (see recipe)

Instructions

  • Make 4 - 1/4 pound patties out of the Italian Sausage
  • Cook them by either pan frying, grilling, or BBQing
  • When the patties are done, put a slice of provolone cheese on each patty and continue cooking until starting to melt
  • Put a patty on each roll and cover with the Condiment for Italian Sausage

Notes

Great with a salad and glass of dry Italian red wine.

Recipe: Italian Sausage Condiment

Italian Sausage Condiment

Ingredients

  • 1 green pepper sliced at least 1/4" thick
  • 1 red pepper sliced at least 1/4" thick
  • 1 Spanish onion sliced about 1/4" thick
  • 1 lb fresh mushrooms slicked about 1/4" thick
  • 2 large garlic cloves minced
  • 1 tbsp olive oil
  • 6 oz can tomato paste

Instructions

  • Fry the peppers, onion, mushrooms, and garlic in the olive oil over medium-high heat until starting to wilt
  • Cover and lower heat to medium and cook stirring occasionally until the vegetables give up their liquid
  • Add in the tomato paste and stir thoroughly
  • Lower the heat to medium-low, cover and cook an additional 15 minutes.

Notes

Tip! You can either serve hot, warm, or cold. It is also great to let your COOKED Italian sausage stew in this for about 30 minutes and then serve over pasta, polenta, rice, or in a bun.
My kids and I also like to eat this with a spoon directly out of the refrigerator!

Recipe: Bratwurst Meatloaf

Bratwurst Meatloaf

Ingredients

  • 1 lb. bulk bratwurst (of course, home made using Papa Greco's bratwurst spice mix!)
  • 1 onion coarsely chopped
  • 1 egg scrambled
  • 1/4 c. ketchup
  • 1/2 c. plain bread crumbs

Instructions

  • Mix all ingredients
  • Put into a bread loaf pan, smoothing out the shape
  • Bake at 350° for 1 hour
  • Let cool 10 minutes before slicing

Notes

Also makes great sandwiches!

Bratwurst Sandwich

Ingredients

  • 1 lb bulk bratwurst (of course, home made using Papa Greco's bratwurst spice mix!)
  • 4 slices Swiss cheese
  • 8 slices pumpernickel or caraway rye bread
  • 2 c. sauerkraut

Instructions

  • Make 4 1/4 pound patties out of the bratwurst
  • Cook them by either pan frying, grilling, or BBQing
  • When the patties are done, put a slice of Swiss cheese on each patty and continue cooking until starting to melt
  • Put a patty on slice of bread and cover with 1/2 cup of sauerkraut, cover with a slice of bread

Notes

Great with a cold mug of beer and sweet and sour red cabbage as a side dish...!
