Recipe: Stuffed Mushrooms

Stuffed Mushrooms


  • 1/2 lb bulk Italian sausage (of course made with Papa Greco's Italian Spice Mix)
  • 1 lb large fresh mushrooms
  • 1/4 c. minced onion
  • 1/4 c. minced carrot
  • 1/4 c. minced green pepper
  • 1 tbsp minced fresh parsley (or 1 teaspoon dried parsley)
  • 1 clove garlic minced
  • 2 tbsp grated cheese (I use imported Romano)


  • Separate the stems from the mushroom caps and mine the stems
  • Fry the sausage, breaking it up into fine pieces
  • Take out the sausage and let cool
  • If there is more than 1 Tablespoon grease in the pan, drain leaving just 1 Tablespoon
  • Fry the minced vegetables in the sausage drippings until soft
  • Combine the cooked sausage and vegetables with the cheese
  • Stuff the mushroom caps with the mixture
  • Bake the stuffed mushroom caps at 350 degrees for 20 minutes
