Recipe: Stuffed Mushrooms
Stuffed Mushrooms
Ingredients
- 1/2 lb bulk Italian sausage (of course made with Papa Greco's Italian Spice Mix)
- 1 lb large fresh mushrooms
- 1/4 c. minced onion
- 1/4 c. minced carrot
- 1/4 c. minced green pepper
- 1 tbsp minced fresh parsley (or 1 teaspoon dried parsley)
- 1 clove garlic minced
- 2 tbsp grated cheese (I use imported Romano)
Instructions
- Separate the stems from the mushroom caps and mine the stems
- Fry the sausage, breaking it up into fine pieces
- Take out the sausage and let cool
- If there is more than 1 Tablespoon grease in the pan, drain leaving just 1 Tablespoon
- Fry the minced vegetables in the sausage drippings until soft
- Combine the cooked sausage and vegetables with the cheese
- Stuff the mushroom caps with the mixture
- Bake the stuffed mushroom caps at 350 degrees for 20 minutes
