A versatile seasoning mix that can be used to make snack sticks, summer sausage or to seasoning ground meat with the great taste of jalapeño peppers and cheddar cheese. Any seasoning that has jalapeño peppers in it has some heat but this has all of the flavor and not much of the heat.

I have successfully used this mix to make snack sticks, summer sausage, and to season hamburgers.

To make summer sausage or snack sticks safely, use 11.34 grams (about 2 teaspoons) of the included meat cure.

Kit #1: Includes seasoning and meat cure.

Kit #2: Includes seasoning, meat cure, and fibrous casings. For summer sausage, either stuff the sausage into the large fibrous casings or shape rolls by hand and wrap them in a double layer of heavy-duty aluminum foil.

Note:

  • You do not need any casings to use this mix to season ground meat for hamburger patties.
  • You do not need cure to make either fresh sausage or to use the mix to season ground meat for hamburger patties.

Papa Greco’s Jalapeño/Cheese Sausage Recommendations:

  1. You can use venison, beef, turkey, pork or any combination of meats
  2. You can hamburger seasoned with this mix to make an outstanding chili
  3. If you like it hotter, you can grind some fresh jalapeños along with the meat before you mix in the seasoning. If you would like it even hotter – use habanero peppers.

The seasoning is packaged by an FDA inspected and approved spice company in foil lined packages to stay fresh longer.
