All seasonings are sold in individual packages, as kits, or as bulk. The kits and bulk orders will save you money! Teriyaki Seasoning Mix: This just might be my most versatile seasoning mix. I have very successfully used it to make snack sticks, summer sausage, to season hamburgers and even as a rub on pork, chicken, beef and venison.

To use this seasoning you must add your own CANNED pineapple juice and soy sauce. Suggested amounts are listed on the package but can be adjusted to your taste.

To safely make summer sausage or snack sticks out of this mix you must use 11.34 grams (approximately 2 teaspoons) of meat cure. You can buy just the seasoning and meat cure together with Kit #1.

To make summer sausage you must case summer sausage in large fibrous casings, or form rolls by hand and wrap in a double layer of heavy duty aluminum foil. The seasoning mix, fibrous casings and meat cure are included in Kit #2.

To make snack sticks you must use 17-21mm edible collagen casings. The seasoning, 21mm snack stick casings and meat cure are available for sale with Kit #3. At this time the 21mm snack stick casings are only available as part of a kit.

You do not need any casings to use this mix to season ground meat for hamburger patties, or as a rub. You do not need cure to make either fresh sausage, to use the mix to season ground meat for hamburger patties, or use the mix as a rub.

Ideas to use making teriyaki sausage

  1. You can pineapple juice or white wine in place of the water to mix the sausage.
  2. You can use venison, beef, turkey, pork or any combination of meats.
  3. If you are using the mix to season hamburgers or as a rub, you can barbecue some sliced fresh pineapple as a wonderful side dish.
